🥔RECIPE: Make an easy, hearty, super-yum supper. It’s that time of year. We need filling, hearty suppers you can throw up in the few minutes. This sheet pan dinner is bursting with flavor, easy to prep, and was polished off this week.

4 chicken breasts

1 ½ pounds baby potatoes cut into ¾ inch pieces

12 ounces broccoli

2 teaspoons olive oil + salt, and pepper

Sauce

¼ cup olive oil

¼ cup freshly squeezed lemon juice (don’t skip the freshly squeezed!)

2 tablespoons (approx 4 cloves) minced garlic

½ teaspoon ground black pepper

½ teaspoons salt

½ teaspoons dried thyme

½ teaspoon dried rosemary

1 teaspoon dried oregano

2 tablespoons chopped fresh parsley

Combine sauce ingredients. Mix potatoes and half the sauce on a sheet pan, add chicken, and pour on the remaining sauce. Bake uncovered for 20 minutes on 400°F. Remove sheet pan, flip the chicken and move potatoes to make space to add the broccoli. Drizzle with olive oil, season with salt and pepper.

Roast for 15 minutes or until done.

😋REC: Make these granola bars. The perfect wind down snack when everyone walks in all at once. Mix 1 cup smooth natural PB or cashew butter, ⅔ cup honey, 1 t vanilla, heaping ½ t sea salt. Add 2 ½ cups rolled oats, ⅓ cup mini chocolate chips

Press firmly into a pan or molds, chill for an hour. Store in the fridge.
